Ingredients
2
cups
rolled oats
I used gluten free
1
cup
sweetened coconut flakes
(You can use unsweetened too)
1
cup
pecans
chopped
1
tbsp
chia seeds
1
cup
peanut butter
any nut butter will do
1/4
cup
100% maple syrup
1/4
cup
coconut oil
1
teaspoon
vanilla extract
Instructions
In a large bowl, combine oats, coconut flakes, pecans and chia seeds. Stir to combine
In a saucepan over medium low heat, combine peanut butter, maple syrup, coconut oil until melted and creamy. Take off stove and add vanilla extract.
Pour peanut butter mixture over oat mixture and stir to combine. Place in freezer for 20-30 minutes until mixture hardens, stirring half way.
Form into 1″ balls and place back in freezer or fridge. Enjoy!
