Perfect for those sweet treat cravings, and jammed packed with yummy protein.
Hey, psst. I have a confession I want to share. My guilty pleasures usually come late in the evening. After the kids are put to bed, I sneak down in the freezer and pull out the goods – the sugary goods. Please don’t tell them! Sometimes, I just don’t want to share.
If you were to open my freezer door, you will notice that we are an energy bite kind of family. I make sure to have some in there at all times.
Energy bites are the perfect way to take hold of cravings, one bite at a time. I don’t feel nearly that guilty consuming them since they are packed with protein, vitamins, sweet coconut flakes and honey to hold my cravings.
Nope, not at all.
The only problem is they don’t last long in our freezer! This recipe made 30 balls (give or take a I ate a few in production) and lasted roughly, two days in our household. Not long enough, eh?
These sweet treats are packed with protein from peanut butter but any nut butter can be used. It’s a very versatile recipe. We also love using almond butter as well.
During the fall time, my favorite nut to use in recipes are buttery pecans. They are a rich source of energy and contain minerals and vitamins that are essential for wellness. They also contain a high source of manganese and fiber.
With such a knock out sweet taste, you won’t even notice they contain chia seeds that will secretly help to curb hunger!
The only downside, (as if there really is one?) is the waiting part. Who likes to wait? Not me, but if you don’t there could be a big old mess. They have to harden in the freezer for 20-30 minutes then be rolled into balls. I recommend stirring the mixture after 15 minutes to ensure all the mixture is cold prior to rolling.
You can store in the fridge or the freezer but we always use the freezer. It’s personal preference. You may just be surprised how deliciously sweet yet healthy this treat is!

- 2 cups rolled oats I used gluten free
- 1 cup sweetened coconut flakes (You can use unsweetened too)
- 1 cup pecans chopped
- 1 tbsp chia seeds
- 1 cup peanut butter any nut butter will do
- 1/4 cup 100% maple syrup
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
- In a large bowl, combine oats, coconut flakes, pecans and chia seeds. Stir to combine
- In a saucepan over medium low heat, combine peanut butter, maple syrup, coconut oil until melted and creamy. Take off stove and add vanilla extract.
- Pour peanut butter mixture over oat mixture and stir to combine. Place in freezer for 20-30 minutes until mixture hardens, stirring half way.
- Form into 1" balls and place back in freezer or fridge. Enjoy!
