I still can’t get over that 2014 is here. It’s already the 4th of January and I’m not really sure what happened to the 1st-3rd!  I’m hoping to slow down the times just a bit.

I love taking the New Year to look back and reflect. Reflect on how I have grown as a person, mom, friend and of course, blogger. Personal achievements and downs. What could I improve on? What could I do better next time? What have I enjoyed? What do I want to accomplish this year and more…

It’s a time to take a step back and relax. Enjoy the slow winter outside and all its beauty. This also means enjoying wintertime foods. Some foods would include: meat, beans, potatoes, greens such as kale and event citrus fruits such as oranges.

By Spring, my husband begs me not to make another bean dish. I just can’t help myself sometimes.

It’s also a great time to bring out the slow cooker! A delicious meal can cook on your counter, while you are at work or running errands. Sit back and relax. Take it slow with some amazing slow cooker meals…

    I just love the combination of polenta and beans. Talk about a rib sticker! Plus, the addition of the cinnamon must really make this a warm and nicely spiced dish. Your husband is a lucky man!

    I absolutely love this vegetarian dish! I have been wanting to try different ways of using polenta, and this looks like a great recipe!

    Sounds like your husband feels about beans the way mine does about lentils. I cook a ridiculous amount of lentils, and I’m sure he’s sick of them! haha. I’ve never thought to serve beans with polenta before, but it looks like a big bowl of goodness! So warming and comforting!
