Spring has sprung and our 84 degree days have already begun! I can’t believe it’s only April! I’m really excited about the fresh fruits and yummy vegetables that are waiting for me to devour. Yes, I’m truly excited. Tonight we tore off the leaves in our “salad” garden and already consumed a big bowl of delicious greens. I can’t wait to sink my teeth into a juicy tomato or sweet corn or a really long, ripe cucumber.
Spring is also the time for new beginnings. This means working on spring cleaning and leaving the garbage in the trash. Mentally, I try to clear out my mind by meditating and starting a new, physically, I work out the new me by new challenging yoga moves and running. In addition, it’s real spring cleaning so I declutter (again and again) our home. I love the feeling of new beginnings, even Sunday and Monday are my favorite days of the week. There’s just something so refreshing to a new start.
Actually, I was so excited to this new start that I bought myself a small gift. Well, if you’re a stay-at-home mom like me and living on one income, it’s a big gift, okay? I bought the Vitamix. Only the best green smoothie blender in my opinion. I was very very excited to throw out old Jane blender and bring in the new chic, Mabel. Mabel is amazing. She doesn’t leave any gritty greens behind and makes everything smooth as a baby’s bottom. And yes, it’s true, the only reason I bought a Vitamix is for delicious green smoothies. Now that spring is here, I’m picking everything in my garden and my neighbors for delicious smoothie treats!
Recipe: Springtime Green Smoothie
Summary: A refreshing start to the new season!
Ingredients
- 2 green apples
- 1 lemon: peeled
- 2 kiwi: peeled
- 1/2″ of fresh ginger
- 2 cups spinach
Instructions
- 1. Place in a blender and mix
- 2. Pour in a glass and enjoy!
