Okay Mama’s, the trick of the week: sneak in those superfoods! Does this sound like your child? I have one kiddo who eats everything good and I do mean everything good. She doesn’t even like cereal but give her a green smoothie and an orange for breakfast and she’s a very happy camper. Child number two likes everything boxed and that’s no lie. What is it with kids hating colors? It’s more like the look test, he glances and says, “nope.” It can be quite daunting and frustrating as a mom to feed these greens! So I may tell a little fib once in a while. I may call things “pudding, yogurt, candy balls,” when they may not be. Do you do that? Please tell me you do!
Our pudding is usually a go, it’s dark in color, it taste like chocolate and it has a lot of depth in flavor. It’s my go-to avocado pudding. This one is called my strawberry-banana yogurt, but please don’t mention the fruit names to my son, for now, it’s yogurt. The texture is smooth, the taste is sweet and the consistency is a little bit runny, like you would find in a yogurt!
But please don’t judge but there’s avocado in this baby. Yup – superfoods here I come!
Ingredients:
- 1 avocado
- 5-6 strawberries: stems removed
- 1 banana
- 1/4- 1/2 cup vanilla almond milk
- 2 teaspoons vanilla extract
Step 1: Place all ingredients into Vitamix (I’m feel pretty confident you can make this in a regular blender too, just pulse the avocado first a few times)
Step 2: Run until combined.
Step 3: Place in fridge for thirty minutes until chilled.
You can obviously cut the strawberries to make them bite size and even add some more banana on top. Those kiddos don’t know it has avocado in it and they don’t need too! It’s delicious and creamy as is and they gobble it up!
Make other variations with different kinds of fruit as well. Experiment and most importantly enjoy!
