Baked Sweet Potato with Maple Pecan Butter

I constantly have food on my mind. It’s almost like a drug, well in a very funny way it is a drug. We need it and I’m addicted to it! But I can be a foodie to the point where my first thought in the morning is “how am I going to make that…” to going to bed at night and wondering about what I want to make the next morning. The truth is, if Mama’s not in the house, nobody is going to eat. Unless its frozen and popped in the oven – we count on me and I count on my daily running thoughts of food. They say a person can have 50,000 thoughts in a day, I truly believe I spend at least 40,000 on food 🙂 No harm, just good eating!

I’m not quite sure how the thought of a sweet potato side dish came in to play but there it was. Just sitting in my head, playing again and again, Make me! Make me! So I went on our daily trip to the grocery store and gathered the ingredients. With two kids under 3, it’s always a challenge. Anyways, let’s talk sweetness, shall we? The sweet potato in its simplicity alone is fantastic, wouldn’t you agree? Just popping this ever so sweet and healthy potato in the oven is a great recipe in its own. It doesn’t need anything but a fork and only because that is polite! Well, here at my house I love my sweet potatoes with everything from melted blue cheese to bacon bits, sour cream and chives to salsa. It’s completely versatile and every so sumptuous. Today, I jazzed up this Earth given beauty and made her sparkle. Then I added a deliciously sweet compound butter that is irresistable. This recipe is a must.

Ingredients:

  • Vegetable oil
  • Stevia in the Raw
  • 4 Sweet Potatoes, washed and scrubbed
  • Maple Pecan Butter (See recipe on site)

Recipe:

1. Preheat oven to 400 degrees

2. Set up a work station. Place oil in container for brushing and Stevia on a plate.

3. Brush oil on the potatoes.

4. Roll in Stevia

4. Prick with fork.

5. Place on oven rack. NOTE: You might want to have a pan underneath for easy catch of anything falling down.

The Stevia makes the potato have a whole new sweet level and also makes it kind of sticky, glossy and fun!

6. Add Maple Pecan Butter (listed in compound butter section) and serve!

How cute, it’s saying “Eat me! Eat me!” Do ya’ll not see that smile? Kind of like a hand puppet – well, do as it says, you won’t regret it! My husband uses all sorts of brown sugar and butter on his potato (all the time. I usually hear, “It’s not you hun. It’s just how I like it,” and then drowns the poor tater. Well, I am completely happy to say, this time, he added nothing. That alone was worth taking note!
